I. INTRODUCTION.
Order
taking is a skilful art of any waiter. After proper greeting and seating, a
waiter needs to wait for guest to take order. In this lesson we will be
discussing about the basic steps in order taking in a restaurant.
II. OBJECTIVES:
At
the end of the discussion, students should be able to:

Actively participate and enjoy the activity

Here are the step-by-step instruction in order taking.
Step 1. Observe your guest.
(teacher calls a student to read) Be
observant and use proper timing.
Smile,make an eye contact and try
to anticipate when guest is ready to order.
Step 2. Approach the Table.
(teacher calls a student to read) Approach
the guest with a smile and
Maintain an eye contact by
saying “Excuse me Ma’amSir, may I take your order?”
Step 3. Suggestive Selling.
(teacher calls a student to read) Recommend
a buffet to your guest.
If the guest prefer to order
from the a la carte menu, advise the guest of the daily specials or other
promotions.
Step 4. Take the order.
(teacher
calls a student to read) During
the ordering process, note down the number of guest and items ordered in a
sequential order corresponding to the seats on your order pad.
Take
order from a lady first followed by an older gentlemen or guest and the host
last.
Step 5.
Repeat the Order
(teacher
calls a student to read) After
all the guest has ordered, repeat the order back from the notepad to the guest
by saying it in a clear, confident and polite manner.
Step 6.
Before leaving the table, thank the guest
politely and
collect all menu.
